Dragon Chicken

 No of Serve: 4 Person


Ingredients for marination: 
Boneless chicken cut in cube - 500gms
Salt - 1 Teaspoon
Pepper powder - 1 Teaspoon
Oregano / mixed herbs - 1 Teaspoon 
Soy sauce - 2 Teaspoon
Egg- 1
Corn flour - 3 Teaspoon

Ingredient for main preparation:
oil
Finely chopped ginger - 2 Teaspoons
Finely chopped garlic - 2 Teaspoons
Chilli Flakes - 2 Teaspoons
Finely chopped green chilli - 1 or 2 (to add flavour) 
Finely chopped onion - 1 cup
chopped Capsicum  - 1/2 cup
soy sauce - 3 Teaspoon
Red Chilli sauce - 4 Teaspoon ( if you don't have handly, add chilli powder)
Tomato ketchup - 4 Teaspoon
sugar  - 1/2 Teaspoon
Corn flour - 1 Teaspoon
Salt as required


Method:

In a bowl mix all the ingredients for marination and massage chicken pieces for a few minutes, and let it sit for a minimum of 1 hour.

Heat oil in a pan. deep fry the chicken pieces in batches (don't overcrowd the pan)
Keep it aside

Take a wide pan 
Heat oil. Add finely chopped ginger, garlic, green chill and onion. Salute well till the onion become golden brown

Add sauces one by one - Soy sauce, chilli sauce and ketchup ( if you are adding chilli powder instead of chilli sauce engage pan with little water to avoid burning). Add sugar and salt
Mix well for few seconds 

Add 1/2 cup of water and let it boil.
Take cornflour in a bowl, add water and mix it without any lumps ( should be in watery consistency) 
Add cornflour water to the boiling pan. 
Mix it well, Now the mixture will be thickening. Adjust with water to get a saucy consistency.
taste and adjust the seasoning.

Add the fried chicken piece and will it well.
Keep sauteing without breaking the chicken pieces until chicken and sauce blend together well.
let the chicken cook in the sauce for 5 mins
Add chopped sping onion at the end to get restaurant taste.

Extra...
Mix the chicken in sauce only for 5 to 10 minsnot more than that, Overcooking will make the chicken dry and hard.
