Easy Egg Rice

No of Serve: 2 Person

Ingredients: 

Eggs - 3 Nos.
Rice - 1 cup
Chopped Onion - 1
Chopped Capsicum - 1 Tbsp (optional)
Chopped Green Chilli - 2
Salt
Curry leaf
Oil / Butter


Method:
Crack open 3 eggs in a bowl and beat well.
Heat the pan and add oil/butter.
Add the following one by one and sauté.
   Mustard seed
   Chopped Green chili
   Chopped Curry leaf
   Chopped onion
   Salt (sauté until onions become transparent).
Pour the eggs and give a mix. Leave it for a minute.
Scramble the egg mixture occasionally and cook till they are lightly done.
Now add cooked rice little by little and mix well. finally, add some pepper powder.
Adjust salt and spice as needed.


Extra...
You can do this with the leftover rice as an evening Tiffen for your children after school.
